Sweet Almond Toast with Boozy Cherries

Sweet Almond Toast with Boozy Cherries  (adapted from Radically Simple Rozanne Gold) (Serves 4)  

Cherry Sauce
  • 8 oz frozen sweet cherries
  • 2 tbs butter
  • 1 tbs honey
  • 1/4 cup whiskey or bourbon
  • Loaf of Challah or Brioche, 8 slices
  • 1 cup sweet condensed milk
  • 2 tbs almond extract
  • 1/4 cup sliced almonds

In a small sauce pan, combine 8oz frozen cherries, 2 tbs of butter and 1 tbs of honey or sugar.  Cook them over medium-high heat until bubbly, about 5 minutes.  Pour in 1/4 cup of your choice of bourbon or whiskey, if it's hot enough it will light on its own, otherwise light it with a match. Flame will die down, continue to cook until syrupy set aside to cool.

In a small bowl, combine 1 cup of sweet condensed milk and 2 tbs of almond extract, stir until well combined.  Spread the sweet condensed milk mixture over both sides bread slices. Make sure you get all the way to the edges and enough for the sliced almonds to stick.

Line baking sheet with parchment paper and place bread slices on rack in baking sheet. Bake in a heated 400 degree oven for 10 to 15 minutes, until browned and caramelized.

Serve immediately with cherries.
