Fried Peach with Ice Cream & Honey Chipotle Sauce

  • 1 large peach, sliced in half
  • 2 eggs
  • 1 cup cornbread mix
  • peanut or vegetable oil
  • 1/4 cup honey
  • 1 tbs agave (optional)
  • 1 tsp chipotle adobo
  • vanilla ice cream
Lightly beat eggs in small bowl, pour cornbread mix in another bowl.  Dredge peach halves first in beaten eggs then in cornbread mixture, repeat. Set aside on a plate.

Fill a heavy pot with enough oil to cover the peach halves, heat to 350 degrees.  Gently drop peach halves into hot oil, fry until golden brown, 2-4 minutes.  Using a spider or slotted spoon transfer to a plate lined with paper towels.  

While the peaches cool combine 1/4 cup of honey, 1 tbs of agave nectar with 1 tsp of chipotle adobo, mix until well combined.  If you like a little more heat feel free add some more chipotle. 

Take a peach half cut side up and scoop a heaping helping of vanilla ice cream on top and drizzle with honey chipotle sauce.
