Slow Cooker Garlic & Brown Sugar Chicken

A delicious savory dish with a bit of sweetness to it that is easily thrown together in the slow cooker.

Slow Cooker Garlic & Brown Sugar Chicken
-4-6 chicken breasts (Since I was just feeding my husband and I, I had 2 really large ones and it was plenty)
-1 cup packed brown sugar
-2/3 cup vinegar
-1/4 cup lemon-lime soda
-2-3 Tablespoons minced garlic
-2 Tablespoons soy sauce
-1 teaspoon fresh ground pepper 
-2 Tablespoons corn starch
-2 Tablespoons water
-Rice or noodles, cooked
-Red pepper flakes (optional)

Spray crock pot with cooking spray and put in chicken. Frozen or thawed work for this.  In a bowl combine brown sugar, vinegar, soda, garlic, soy sauce & pepper.  Pour over chicken and set it on high for 4 hours or low for 6-8.  Take chicken pieces out of crock pot and place in a separate bowl.  Pour the remaining broth in a saucepan and add the corn starch and water and mix well. Bring to a boil and let it boil for 2-3 minutes, or until it starts to thicken and turns into a glaze.  Shred the chicken with 2 forks and serve over a bed of rice topped with the glaze.
