This is our annual Christmas morning breakfast because it is so so good and so quick to throw together! It's also great to make at the beginning of the week and warm it up by the plate full throughout the week for a fast and filling breakfast.
Cheesy Ham & Potato Breakfast Casserole
1 (32 oz.) frozen cubed hash browns
8 ounces cooked, diced ham
2 (10.75 oz.) cans cream of potato soup
1 (16 oz.) sour cream
2 cups shredded cheddar cheese
1 1/2 cups shredded parmesan cheese
Mix everything except the parmesan cheese in a large bowl. Pour into a greased 9x13 baking dish and top with the parmesan cheese.
Bake this in a 375 degree oven for 1 hour.
