My version of the Pioneer Woman's Chocolate Brownies
1 cup Butter
4 oz, weight Unsweetened Chocolate
1/4 (plus a Tbsp more) Unsweetened Cocoa
2 cups Sugar
1 Tbsp Vanilla
1 tsp Instant Coffee Granules
3 Large Eggs
1-1/4 cups Flour
3/4 cups Semi-Sweet Chocolate Chips
Powdered sugar for sifting
Melt butter & chocolate bar over low heat, whisking occasionally.
Add Unsweetened cocoa. Stir till combined.
Stir in coffee granules. Stir till combined.
Remove from heat and allow to cool for about 5 minutes.
Stir in sugar & vanilla together. Don't overstir.
Whisk in eggs until just combined (individually, or at least break yolks prior to whisking them in).
Add flour and stir till just barely combined.
Add chocolate chips & finish stirring until just barely combined.
Pour into greased 9x13 & bake at 350 for approximately 30-40 minutes or until brownies are slightly springy to the touch.
Allow to COOL.
I repeat. ALLOW TO COOL. completely.
Sorry. It is just really necessary with these brownies.
Once cooled, dump onto a cutting board and cut into small squares. Sift powdered sugar over the top.
Doesn't matter to me. I've done both. :)
