Rice Crust

  • 2 Cups cooked white, short-grain rice, cooled.
  • 1 egg
  • 1/4 C finely shredded cheese such as mozzarella, cheddar, or mix cheese
  1. Preheat oven to 400 degrees. Lightly oil a round pizza pan or spray with non-stick spray. 
  2. In a large bowl, combine rice, egg, and cheese with a spatula or wooden spoon until thoroughly mixed. 
  3. Spread rice mixture onto pizza pan into a round, pressing lightly and making the crust about 1/4" or slightly less thick. It doesn't have to reach out to the sides of the pan. 
  4. Bake in oven until set-- about 5 minutes. Put toppings on pizza and finish cooking in the oven.
