1 pizza crust (9" pizza)
1 cup tomato sauce (see note)
1 1/2 cups mozzarella
2 sweet potatoes (I used Okinawan purple sweet potatoes)
1 Tbsp olive oil
salt to taste
4 slices bacon, cooked and chopped
1) Scrub the sweet potatoes clean. Boil them whole in 6 cups of water for 30-40 minutes or until easily pierced with a fork. Remove from the water and let cool. Peel and then slice into 1/4" slices. Toss lightly with olive oil and salt.
2) Preheat the oven to 500 degrees and place pizza stone on the middle rack. Stretch out pizza crust and ladle sauce in the middle of the crust. Push the sauce out to within 1/2" of the edge of the crust. Sprinkle with cheese.
3) Scatter the sweet potatoes and bacon over the top of the cheese. Bake for 10 minutes or until crust is browned and cheese is melted. Let cool for 10 minutes before cutting.
Note: I make tomato sauce for pizza by adding tomato paste to either a blended up can of diced tomatoes or a can of tomato sauce. Then I add olive oil, garlic, salt, honey/sugar, and/or dried basil according to taste. Taste of canned tomatoes can vary a lot, so it's better to go by taste than by measurement.
