Graham Crust

Momofuku Milk Bar's Graham Crumb recipe:

1 1/2 cups graham cracker crumbs
1/4 cup milk powder
2 tbsp sugar
3/4 tsp kosher salt
1/4 cup butter, melted, plus more if needed
1/4 cup heavy cream

Toss the graham crumbs, milk powder, sugar and salt together until evenly distributed.

Whisk the melted butter and heavy cream together. Add to the dry ingredients and toss again to evenly distribute. The mixture should hold its shape if squeezed tightly. If it is not moist enough to do so, melt an additional 1 to 1/2 tbsp butter and add it to the mixture.

Take 3/4 Cup of this mixture (Save the rest to throw into some compost cookies or just for snacking), scatter it onto a cookie sheet, and bake it at 375 degrees until toasted, about 7 minutes. Cool completely and break into crumbs if needed.
