Bacon Breakfast Casserole


  • 1 pound bacon
  • 4 eggs (I used five because I didn't have enough milk -- whoops!)
  • 1 cup baking mix
  • 1 cup shredded cheddar cheese
  • 2 cups milk (I think I only added a cup and a half total)
  • Salt and pepper to taste

Cook your bacon until almost crispy; drain and set aside.  Crack your eggs into a mixing bowl and whisk.

Add the baking mix, cheese, milk, and salt and pepper to the eggs; whisk to combine.

Layer the bacon into the bottom of a greased 9x13 baking dish.  Pour the egg mixture evenly over the top of the bacon.  

Bake at 350 degrees for 25-30 minutes or until cooked through.  Cut into squares, serve, and enjoy!
