Stuffed Pepper Skillet Dinner

Stuffed Pepper Skillet Dinner:

*Prep Time: 10 minutes  *Cook Time: 35 min  *Difficulty: Easy  *Servings: 4-6

  • 1 lb Ground Meat (I used ground beef)
  • 1 Onion, diced
  • 2 Bell Peppers, diced
  • 3 Cloves of Garlic, minced
  • 2 c Kale
  • 1 15 oz can of Diced Tomatoes
  • 1 c Rice, uncooked
  • 4 c Beef Broth
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 2 c Shredded Cheddar Cheese
  1. In a deep skillet, brown your ground meat. 
  2. Add the onion and bell peppers to the pan and cook until soft and translucent.
  3. Add the garlic and seasonings to the pan.  Cook for 1-2 minutes. 
  4. Add the tomatoes, rice, kale, and beef broth to the pan and stir together. 
  5. Bring to a boil and lower to a simmer.
  6. Cover and cook for 30 minutes, stirring occasionally.*
  7. After 30 minutes remove the lid and cook for 5 more minutes to reduce any excess liquid.  
  8. Top with cheese and cover to melt.**
  9. Serve and Enjoy!
 *The 30 minutes was for brown rice.  White rice will be more like 15-20 minutes.
**Place the pan under the broiler if you want the cheese to be brown and bubbly.
