Simple Summer Succotash Recipe

Simple Summer Succotash Recipe:

Ingredients:

  • 1 bag of Frozen Lima Beans
  • 1 bag of Frozen Corn
  • 1 Red Bell Pepper, diced
  • 1 Red Onion, Diced
  • 4 cloves of Garlic, minced
  • 4 Sliced of Bacon, cooked and chopped
  • 1 tsp Dried Dill
  • 2 Tbsp White Wine Vinegar
  • Salt and Pepper, to taste
  • 1 Tbsp Butter
Directions:
  1. In a COLD pan, place the bacon into a deep skillet. 
  2. Turn the heat on to medium/high and cook the bacon for about 10 minutes, until crips. 
  3. Remove the bacon from the pan. 
  4. To the rendered bacon fat add the onion and cook 2-3 minutes until soft and translucent.
  5. Add the bell pepper to the pan and cook another 2-3 minutes. 
  6. Add the garlic and cook just long enough to smell it coming from the pan. 
  7. Add the dill to the pan. 
  8. Add the corn and the lima beans to the pan. 
  9. Add the white wine vinegar to the pan. 
  10. Season with salt and pepper.
  11. Stir everything together, cover, and cook long enough for everything to thaw and heat through completely. 
  12. Return the crumbled bacon to the pan. 
  13. Stir in the butter. 
  14. Serve and enjoy!
