Pumpkin Oatmeal and Chocolate Chip Cookie Recipe

Pumpkin Oatmeal and Chocolate Chip Cookie Recipe:

  • 1 c Unsalted Butter, softened
  • 3/4 c Granulated Sugar
  • 3/4 c Packed Brown Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 2 c All-Purpose Flour
  • 1 c Quick Cooking Oats
  • 1 tsp Baking Soda
  • Pinch of Salt
  • 1 c Canned Pumpkin
  • 1 Tbsp Pumpkin Pie Spice
  • 2 c Semi-Sweet Chocolate Chip
  1. Preheat the oven to 350 degrees. 
  2. Combine the sugars and butter into a mixing bowl and mix until smooth. 
  3. Add the egg, pumpkin, pumpkin pie spice, and vanilla to the mixing bowl and mix that until smooth as well. 
  4. Add HALF of the four and oats to the mixing bowl.  Mix until fully combined. 
  5. Add the other half of the flour and oats as well as the baking soda and salt. Mix until smooth. 
  6. Add the chocolate chips and gently fold into the dough with a rubber spatula. 
  7. Place approximatly 12 tablespoon-sized balls of cookie dough on a baking sheet. 
  8. Place the baking sheet into the 350 degree oven and bake for 13-15 minutes. 
  9. Remove the baking sheet from the oven and let cool for 10 minutes, then transfer to a cooling rack.
  10. Serve and Enjoy!
