Ingredients: - 5 Roma Tomatoes, diced
- 1 Red Onion, diced
- 1/2 of a Jalapeno Pepper, with the ribs a seeds removed, and diced
- 4-6 Cloves of Garlic, minced
- 1 lime, zested and juiced
- 1/4 c. Fresh Cilantro, chopped
- Salt and Pepper, to taste
Directions: - In a mixing bowl, combine the tomatoes, onion, garlic, lime zest, lime juice, salt, pepper, and cilantro.
- Stir everything together and taste for seasoning.
- Make any adjustments you feel it needs.
