Loaded Baked Potato Macaroni Salad


  • 2 c. uncooked elbow macaroni
  • 1 c. sour cream
  • 1  c. mayonnaise
  • 3 T. apple cider vinegar
  • 2 tsp. granulated sugar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 12 slices bacon, cooked crisp & crumbled
  • 1 (8 oz.) block sharp cheddar cheese, cut into small cubes
  • 10 green onions, sliced thinly {both white & green parts}


  1. Cook macaroni in boiling salted water according to package directions. Drain and set aside to cool while preparing the rest of the ingredients.
  2. In a large bowl, whisk together sour cream, mayonnaise, vinegar, sugar, salt, and pepper.  Add macaroni and stir until well combined.
  3. Add crumbled bacon, cheese cubes, and green onion.  Toss until mixed.
  4. Cover and chill for at least an hour before serving.
