Fresh Cucumber Pickles {a.k.a. Refrigerator Pickles}

  •  small pickling or Kirby cucumbers ~ unpeeled, ends trimmed, & cut into spears
  •  apple cider vinegar
  •  water
Approximately:  {adjust spices to personal taste}
  • 1 1/2 T. dried minced onion
  • 1/4 tsp. crushed red pepper
  • 1/2 tsp. dill seed
  • 1/2 tsp. dried dill weed
  • 1/4 tsp. celery seed
  • 1/2 tsp. salt
Place in a large jar:
  1. Cucumber spears ~ placed in vertically to fill the jar tight
  2. Apple cider vinegar ~ fill to a little over 1/2-way up the jar
  3. Water ~ fill to the top of the cucumbers, leaving a little bit of space at the top for the spices
  4. Spices ~ sprinkle on the top
Place the lid on the jar and shake it up, mixing the spices into the vinegar mixture. Put in the refrigerator for at least two days before eating.  Can be stored in the refrigerator for about a week {after that, the spices get too strong in the cucumbers!}.
