Low-Fat Whole Wheat Molasses Cookies

Makes 17 cookies
 
1 cup white whole wheat flour
1/2 cup rolled oats
1 tsp. aluminum free baking powder
1/4 tsp. cinnamon
1/4 tsp. sea salt
1/2 cup raw turbinando sugar
3 Tbsp. unsweetened almond milk
1 Tbsp. Earth Balance Butter
1 tsp. vanilla extract
1/4 cup chopped walnuts
1/4 cup raisins

Preheat oven to 350 F.  Combine all dry ingredients in one bowl and all wet ingredients in another.  Mix together being careful not to over-mix the batter.

Drop by heaping tablespoon onto lightly greased baking sheet or use parchment paper.  Flatten each cookie with the bottom of a class.  To prevent sticking either flour bottom of glass or spray lightly with olive oil.

Bake cookies for 15 minutes.  Cool completely and store in airtight container to prevent cookies from hardening.
