Blueberry Pie


 
5 cups of fresh blueberries (if using frozen berries, allow to thaw first & drain well)
1 Tbsp. lemon juice
1 package refrigerated pie crusts (2 crusts/ box)  OR you can make your favorite crust recipe
3/4 to 1 C. sugar ...depending on the sweetness of your berries
1/2 C. all-purpose flour
1/8 tsp salt
1/2 tsp. ground cinnamon
2 Tbsp. butter or margarine
1 tsp. sugar for top

1.    Sprinkle berries with lemon juice; set aside

2.    Place one sheet of pie pastry in a 9-inch pie plate according to package directions

3.    Combine 1 C. sugar & next 3 ingredients; add to berries, stirring well

4.    Pour into pastry shell & dot with butter

5.    Unfold remaining pastry sheet on a lightly floured surface; cut star shapes

6.    Place pastry stars over filling in attractive pattern

7.    Sprinkle stars with 1 teaspoon sugar  (I used lg. decorator sugar crystals)

8.    Bake at 400° for 35-45 minutes or until golden & juice begins to bubble (may place a tray beneath rack to catch drips)

9.    Cover edges with aluminum foil to prevent over-browning

10.  Cool completely before cutting for best results
