Radish Butter

6 ounces (12 Tablespoons) butter, at room temperature

7 large radishes, trimmed and julienned

Juice from 1/2 a lemon at room temperature

1/4 cup fresh mint leaves, finely chopped

2 Tablespoons fresh parsley, finely chopped

2 Tablespoons fresh chives, finely chopped

Kosher salt to taste

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed.  Add the lemon juice and herbs; beat until combined.  Using a spatula, fold in the julienned radishes.  Season to taste with kosher salt.  Serve with baguette croutons.  Enjoy!
