Shrimp with a Chipotle Dipping Sauce

serves 8-10


2 pounds of cooked tail-on shrimp


For the Sauce

1/2 cup sour cream

1/2 cup mayonnaise

1-2 chipotle peppers in adobe sauce

1/2-1 teaspoon adobe sauce

1/4 cup roasted red bell pepper

1/4 cup chopped cilantro

1 clove garlic, chopped

juice of 1/2 lime

pinch of Kosher salt


Place all the ingredients for the sauce in the bowl of a food processor or blender; purée until smooth.   The sauce can be made up to two days ahead and kept in an airtight container in the refrigerator.  Serve with the shrimp.  Enjoy!
