Pico de Gallo

makes about 2 1/2 cups

6-8 ripe Roma tomatoes; halved, seeded, and finely diced

1/2 medium white onion, finely diced

1/2 cup cilantro or more to taste, chopped

1-2 garlic cloves grated on a micro-plane

1 jalapeño pepper, more or less to taste; deveined, seeded, and finely diced 

1/2 teaspoon kosher salt

Juice of 1/2 lime or more to taste

In a medium bowl, combine the diced tomato, onion, cilantro, garlic, jalapeño, salt and lime juice.  Stir until the ingredients are well combined.  Allow the mixture to rest for 15- 20 minutes.  Taste and season with additional, salt, lime juice.  Enjoy!
