Southern Fried Pickles


1 cup Flour

1 teaspoon Baking Soda

sprinkle of Ground Pepper

1 tablespoon Garlic Powder

1 cup Diet Cola

no sugar added Bread and Butter Pickle Slices

Dipping Sauce

1/2 cup Mayo

1 tablespoon Sweet Relish

1 teaspoon Lemon Juice

1 teaspoon BBQ Sauce

Hot Sauce to taste

The first thing to do when making this recipe, is to make the dipping sauce. Once you start frying up the pickles, it goes fast, as the pickles take very little time. Mix together the mayo, sweet relish, lemon juice, and BBQ sauce. Add the hot sauce to suit your taste. Refrigerate.

2.To make the batter for your pickles, mix the flour, baking soda, ground pepper and garlic powder together. Slowly whisk in the cola. I used the diet because I didn't want any extra sweetness, but regular soda would work also. I you discover you have lumps, pour the batter through a strainer into another bowl. This works great to get smooth sauces.

3. Place the pickle slices in a paper towel to dry them off. Dip them in the batter and then place each one in your fryer or pan of oil. They fry very quickly, so keep an eye out, and flip them over when needed.

Remove them to a paper towel covered plate to cool slightly.

5. Serve with your sauce and enjoy.
