Italian Turkey Stuffed Shells


-1 lb. box of jumbo shells
-1 pkg. ground turkey
-2 cups homemade or canned pasta sauce
-1 to 2 Tbsp. EVOO
-2 big handfuls of spinach leaves
-2 cups plain Greek yogurt
-1 cup shredded part-skim mozzarella
-1 tsp. dried basil leaves
-1/4 tsp. garlic powder
-dashes of S&P
-Parmesan cheese


-Heat oven to 350 degrees
-Cook the shells according to the package. Drain and set aside.
-Spray a 9x13 baking dish with cooking spray.
-Drizzle a little EVOO in a medium pan over medium-high heat.
-Cook down the turkey until browned and then add the spinach {2 handfuls of spinach seems like a lot but it wilts very fast}.
-Sprinkle with a little salt and black pepper.
-Once both are cooked well enough, take turkey mixture off  heat.
-Spread pasta sauce in baking dish
-Time to start stuffing! Cheese mixture first, then meat mixture.
-Place the shells next to one another. I only used 13 shells for dinner tonight. Unless you're hosting a party or get together, I wouldn't use the entire box of shells. There are a lot!
--Top the stuffed shells with a little more pasta sauce and shredded mozzarella. Sprinkle with Parmesan cheese.
-Cook for 10 minutes, uncovered; or until the cheese has melted.
