Cod with Orange Glaze

  • 1/2 cup orange marmalade
  • 2 teaspoons sesame oil
  • 2 teaspoons reduced-sodium soy sauce
  • 1/2 teaspoon grated fresh ginger root
  • 1 garlic clove, crushed
  • 3 tablespoons white rice vinegar (or other white vinegar)
  • 1 lb cod (or haddock or salmon)


Whisk together marmalade, oil, soy sauce, ginger, garlic, and vinegar in a small bowl. Heat cast iron skillet or grill pan over medium heat on stove top. Brush glaze onto each side of fish; cook about 5 minutes on each side. Serve immediately.
