Coconut-Orange Muffins

Makes 12 muffins.

Ingredients

  • 3/4 cup sugar
  • 4 Tbsp butter
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup toasted coconut
  • 1/4 tsp coconut extract
  • 1/4 tsp orange extract
  • 1/2 cup milk

Directions

  1. Preheat the oven to 350°F.
  2. Cream the sugar and butter. Add eggs. Stir in the remaining ingredients in the order listed.
  3. Divide batter into lined muffin pan. Bake for 20-25 minutes. (Do not let the muffins brown or they will be too dry.)
