Banana Muffins

Makes 12 muffins.


  • 1 cup + 2 Tbsp whole wheat flour (you could also use all-purpose flour or a combination of the two)
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 4 Tbsp butter, melted
  • 4 ripe bananas
  • 2 large eggs, beaten


  1. Preheat the oven to 375°F. Lightly grease a muffin tin or line with paper.
  2. Sift together flour, baking powder, and cinnamon in a large bowl. Then make a well in the center.
  3. Mash the bananas to a smooth, thick consistency. Then add the melted butter and eggs and mix well.
  4. Pour the banana mixture into the dry mixture and fold together lightly.
  5. Spoon into the prepared muffin tin and bake for 10 to 15 minutes until the muffins are light brown and spring back to the touch. Cool for 5 minutes before removing them from the pan.
