  • 2 teaspoons olive oil, divided
  • 3/4 cup onion, chopped
  • 3/4 cup carrot, finely diced
  • 1 garlic clove, minced
  • 2 cups vegetable broth
  • 1/4 teaspoon salt

  • 1 Granny Smith apple, peeled and finely chopped
  • 3 tablespoons slivered almonds, toasted

  2. Heat remaining 1 teaspoon oil in a nonstick skillet over medium-high heat. Add apple to pan, and sauté 7 minutes or until apple begins to brown.
