Makes about 4 dozen cookies
1 cup (2 sticks) butter, softened
3/4 cup packed light brown sugar
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 1/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup coarsely chopped macadamia nuts
1-1/2 cups (12 oz.) white chocolate baking chips, or coarsely chopped
Preheat oven to 375 degrees.
Beat butter, both sugars, and vanilla on medium speed, until creamy. Beat in the eggs, one at a time, until light and fluffy. Blend in flour, baking soda, and salt on low speed until mixed. Stir in macadamia nuts and white chocolate. Drop dough by rounded teaspoonfuls onto ungreased baking sheets.
Bake for 8-10 minutes, or until edges are golden brown. Cool on baking sheets for 2 minutes, then remove to wire racks.
