Roasted Sausage, Peppers and Sweet Potatoes

Serves 4



2 bell peppers, any color

2 large sweet potatoes, peeled

14 oz. lean smoked sausage (turkey, beef or chicken)

1 small onion

3 garlic cloves

2 tablespoons olive oil

1 teaspoon herb de Provence

1 teaspoon kosher salt

1/2 teaspoon freshly ground pepper


Preheat oven to 425 degrees.
Chop bell peppers, sweet potatoes, sausage and onion into 1-inch pieces. Mince garlic. Combine chopped onion and garlic in a small bowl; set aside.
Toss peppers, potatoes and sausage onto a large baking sheet lined with nonstick aluminum foil. Coat with olive oil, herb de Provence, salt and pepper, and toss until coated.
Roast for 35-40 minutes. During last 20 minutes of roasting, add onion and garlic, tossing gently to coat.
