Parmesan Potato Wedges

4-5 medium red potatoes (about 2 pounds), washed
3 tablespoons extra-virgin olive oil
½ tsp. garlic powder
½ tsp. chili powder
1 tsp. pepper
1 tsp. salt
2 tbsp. grated Parmesan

Preheat oven to 450 degrees. Line a baking sheet with foil. In a medium bowl, combine oil and spices, including salt and pepper, and whisk together.

Cut potatoes into wedges (Cut in half, then halve each half). Place potatoes on the baking sheet and lay skin-side down, so that the ridges face up. Drizzle the oil mixture over the potatoes, until each potato is lightly coated. Season with salt and pepper. Bake for 25 minutes.

Once potatoes are out of the oven, lightly coat with grated Parmesan and transfer to a bowl lined with paper towels to soak up excess oil. Serve.
