Homemade Whole Wheat Pancake Mix

Mix yields 12-14 servings total

 

Ingredients

1 cup all-purpose flour

1/2 cup whole wheat flour

4 teaspoons sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

 

Additional ingredients for pancakes:

1 egg

3/4 cup milk

1 tsp. vanilla extract

 

Directions

In a large bowl, combine the first six ingredients. Store in an airtight container in a cool, dry place for up to 3 months. This mix makes 6-7 batches of pancakes (about 6-3/4 cups total).

 

To prepare pancakes: In a small bowl, whisk egg, milk and vanilla. Whisk in 1 cup pancake mix.
 
Pour batter by 1/4 cupfuls onto a lightly greased pan. Set to low heat. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Makes about 6 pancakes per batch.
