Fresh Apple and Walnut Salad with Cranberry Vinaigrette

Serves 6



1/4 cup chopped walnuts

1/8 cup cranberries

1/8 cup balsamic vinegar

1/2 tablespoon white sugar

1/2 tablespoon Dijon mustard

1/2 cup olive oil

Salt and pepper, to taste

5 cups mixed salad greens, rinsed and dried

1 Granny smith apple, cored and thinly sliced



In a food processor, combine the walnuts, cranberries, vinegar, sugar, and mustard. Puree until smooth. Gradually add olive oil. Season with salt and pepper.


In a salad bowl, toss together the greens, apples, and enough of the cranberry vinaigrette to coat.
