French Apple Cake

Serves 6-8

1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
2/3 cup granulated sugar, plus 1 tablespoon for topping
2 large eggs
1 teaspoon pure vanilla extract
3 tablespoons Captain Morgan Spiced Rum
2 apples, peeled, cored and cut into 1/2-inch cubes
Powdered confectioners’ sugar


Preheat oven to 350 degrees F. Spray a 9-inch springform or regular cake pan with nonstick cooking spray.

In a small bowl, whisk together flour, baking powder and salt.
In a large bowl, cream butter and sugar with a mixer until light and fluffy, about 3 minutes. Add eggs, one at a time, beating well and scraping down sides of bowl after
each addition. Mix in vanilla and rum. Turn mixer to low speed and add flour, mixing until just combined. Fold in chopped apples.
Pour batter into prepared pan and smooth evenly. Sprinkle with 1 tablespoon granulated sugar. Bake for 40 minutes, or until cake is lightly golden and toothpick inserted in the center comes out clean. Allow cake to cool about 10 minutes.
Run a blunt knife around the edges of the cake and remove sides of springform pan if using. Dust with powdered sugar, if desired. Slice and serve warm or room temperature. It’s great with freshly whipped cream or vanilla ice cream!
