Spicy Fudge Brownies

Makes 12 brownies


6 ounces high quality dark chocolate, broken into pieces

1 stick unsalted butter

1 1/2 cups sugar

3 eggs

1 teaspoon pure vanilla extract

1 cup flour

1 teaspoon chipotle powder

1 teaspoon ground cinnamon

1 teaspoon salt

Preheat the oven to 350 degrees. Line a square baking pan with aluminum foil, allowing some to hang over the sides of the pan. Spray the foil with non-stick cooking spray. 

In a large bowl, add the chocolate and butter. Microwave on high for one minute, then stir. Continue microwaving in 30-seconds increments, stirring each time, until the mixture is completely melted and smooth.

Add the sugar to the chocolate mixture and mix well. Add in the eggs and vanilla and whisk until combined. Fold in the flour, spices and salt. Pour the batter into the baking pan and spread evenly. Bake for 30 minutes, or until a cake tester inserted into the center of the brownies comes out clean. Set on a wire rack to cool.

Using the foil as handles, remove the brownies from the pan. Cut into 12 squares and serve.
