Rice Krispies Fruit & Nut Breakfast Bars

Makes 24 bars


4 cups Kellogg's Rice Krispies cereal

1 cup golden raisins 

1/2 cup pumpkin seeds 

1/2 cup peanuts

3/4 cup packed brown sugar

1/2 cup honey

1/4 cup creamy peanut butter

1 teaspoon pure vanilla extract

Spray a 9 x 13 inch pan with non-stick cooking spray. In a large bowl, mix the cereal, raisins, pumpkin seeds, and peanuts. 

In a medium saucepan, heat the brown sugar, honey and peanut butter to a low boil over medium heat, stirring often. Allow to boil for 1 minute, then remove from the heat and stir in the vanilla.

Pour the warm syrup mixture over the dry mix and toss to coat everything evenly. With lightly buttered hands, press the mixture firmly in the pan. Refrigerate for 30 minutes. Cut into 24 bars, 6 rows by 4 rows.
