Grandma Jane's Orange Cookies

Makes 2 dozen cookies


Ingredients:

2/3 cup unsalted butter, at room temperature

3/4 cup granulated sugar

1 egg

1/2 cup orange juice

2 cups all purpose flour

1/2 Tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt


Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or a Silpat and set aside.


In the bowl of your stand mixer, beat the butter and sugar until pale in color and fluffy. Add the egg and mix until combined.


Whisk all of the dry ingredients in a medium size bowl. Alternately add the dry ingredients and the orange juice to the mixer until the dough is smooth.


Using a medium scoop, place the dough on the prepared baking sheet, then bake for 8 to 10 minutes. Allow the cookies to set on the cookie sheet for 5 minutes, then remove to a cooling rack to cool completely. Store the cookies in an airtight container.
