Apple Pecan Chicken Salad

Serves 4


2 cups chopped rotisserie chicken

2 stalks celery, diced

1 cup diced Honeycrisp apple 

1/2 cup chopped pecans 

1/2 plain Greek yogurt

1 Tablespoon mayonnaise

Juice of half a lemon

Salt and pepper

Freshly chopped parsley 

Add the chicken, celery, apple and pecans to a large bowl. In a small bowl, stir together the yogurt, mayonnaise and lemon juice. Season the dressing to taste with salt and pepper. Pour the dressing over the other ingredients and gently mix to combine. Sprinkle with freshly chopped parsley, if desired.
