Crispy Oven Fries

Crispy Oven Fries
Adapted from I Wash You Dry
Serves 4

2 large russet potatoes (or 3 medium potatoes), peeled and sliced into ½-inch strips
2 tablespoons extra virgin olive oil
¼ cup plain breadcrumbs
2 tablespoons grated parmesan cheese
½ teaspoon onion powder
1 teaspoon paprika
¼ teaspoon cayenne pepper
½ teaspoon salt
Freshly cracked black pepper, to taste

1. Preheat oven to 425F. Line baking sheet with aluminum foil and spray lightly with nonstick cooking spray; set aside.
2. In a small bowl, mix breadcrumbs, parmesan cheese, onion powder, paprika, cayenne, salt, and pepper until combined. 
3. Place potatoes and oil in a ziptop bag and toss to coat evenly. Add breadcrumb mixture to bag, seal, and shake until potatoes are coated evenly. 
4. Arrange potatoes on prepared baking sheet in a single layer. Bake, turning potatoes halfway through, until crust is golden brown, about 25 to 27 minutes.
