Maple Cinnamon Oatmeal Cookies

Maple Cinnamon Oatmeal Cookies
Adapted from Hot Polka Dots
Makes 2 dozen cookies

½ cup (1 stick) unsalted butter, room temperature
½ cup granulated sugar
½ cup pure maple syrup
1 egg
½ cup flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
2 cups rolled oats

1. Preheat oven to 350F. Line baking sheets with parchment paper or silicone baking mats; set aside. In a medium bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt; set aside.
2. In the bowl of an electric mixer, cream butter and sugar on medium-high until light and fluffy, about 3 minutes. Add egg and maple syrup, beating until combined, scraping down the sides of the bowl as needed.
3. Reduce speed to low and add flour mixture, mixing until just combined. Add oats, mixing until just combined to form a stiff dough.
4. Scoop a heaping tablespoon of dough onto prepared cookie sheets, spacing about 2 inches apart. Flatten dough slightly with your fingers. Bake, rotating sheets halfway through, until cookies are light golden around the edges and centers have set, about 10 minutes. Let cool on baking sheet for several minutes before transferring to a wire rack to cool completely.
