Sweet Sticky Rice With Mango And Coconut Sauce

Makes 3 Servings

Prep time 30 Minutes (After Soaking Sweet Rice For 12 Hours)

Ingredients:

1 cup of raw sweet sticky rice soaked in water for 12 hours

1/2 cup of coconut milk

1/4 cup of sugar

3-4 mangoes peeled and sliced

Coconut Glaze

Ingredients:

1 cup of coconut milk

1.5 tablespoons of sugar

1/4 teaspoon of kosher salt

1/2 tablespoon of tapioca powder add 1 teaspoon water (mix the tapioca powder and water together.)

Garnish

1 tablespoon of toasted sesame seeds

Microwave Sticky Rice

1) Soak 1 cup rice for 6 hours in water

2) After soaking rice, rinse 3 Times to remove excess starch

3) Completely drain rice--place in a microwaveable bowl

4) Cover and microwave for 7 minutes. Stir and microwave 5 minutes more

Soaking your rice for overnight or a minimum of 12 hours is very important. The rice must soften up.
