  • 8 oz. linguine
  • 2 tablespoons extra-virgin olive oil
  • 1 pint grape tomatoes, halved lengthwise
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 5 fresh basil leaves

  1. Bring water to a boil in a large pot and cook the pasta according to the package directions.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the grape tomatoes and cook down for 2-3 minutes. Use the back of a wooden spoon to crush some of the tomatoes to help release their juice.
  4. Reduce the heat to medium-low. Add the garlic and salt and pepper, to taste. Cook for another 1-2 minutes.
  5. While the sauce is simmering, chiffonade the basil leaves.
  6. Once the pasta has finished cooking, reserve a cup of the cooking liquid.
  7. Add the cooked pasta directly to the pan sauce. Add the basil and toss gently.
  8. If you prefer, add some of the pasta water to thicken the sauce. If you want a thinner sauce, add some more extra-virgin olive oil. Serve immediately.
