Cherry Fudge Brownies

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup Scharffen Berger Unsweetened Cocoa Powder
  • 3/4 cup sugar
  • 2 eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fresh cherries, pitted and chopped

  1. Preheat the oven to 350°F.
  2. Grease an 8x8x2-inch baking pan with the unsalted butter.
  3. In a large microwavable bowl, melt the remaining butter.
  4. Add the cocoa powder to the melted butter and stir until well combined.
  5. Add the granulated sugar. Mix well.
  6. Add the eggs, one at a time, and beat well after each addition.
  7. Stir in vanilla, flour, salt. Be careful not to over-mix.
  8. Fold the cherries gently into the batter.
  9. Spread the batter into the prepared pan. Bake 25-30 minutes or until toothpick comes out clean.
  10. Cool 5-10 minutes before cutting and serving.
