Barbecue Chicken Pizza

Original Recipe on Taste As You Go


  • 2 tablespoons extra-virgin olive oil, divided
  • 2 boneless/skinless chicken breast halves
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup spicy barbecue sauce
  • 1 12-inch pre-baked pizza crust
  • 1/2 cup fresh cilantro, chopped
  • 1 cup red bell pepper, diced
  • 1 cup white onion, diced
  • 2 cups shredded Mexican blend cheese


  1. Preheat oven to 350°F.

  2. Heat 1 tablespoon olive oil in a large skillet over medium heat for 2 minutes.

  3. Season both sides of each chicken breast half with salt and pepper. Place the chicken in the skillet and cook for 4-6 minutes. Turn and cook for another 4-6 minutes, or until golden brown. Cooking time will depend on the type of stove you're using. Remove the chicken from the skillet and set aside to cool.

  4. Wipe the skillet clean with a paper towel. Heat the remaining tablespoon of olive oil in the skillet over medium heat for 2 minutes. Saute the bell peppers and onions until tender to personal preference. Set aside.

  5. Dice the chicken and place into a medium bowl. Toss the chicken with the barbecue sauce.

  6. Place the pizza crust on a baking sheet. Spread the chicken mixture onto the crust.

  7. Spread the cooked vegetables over the chicken and then sprinkle the chopped cilantro on the top. Top everything with the shredded cheese.

  8. Bake the pizza for 15 minutes, or until the cheese is melted and bubbly. Allow to rest at least 5 minutes before slicing and serving.
