Almond Butter Cookies

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3/4 cup sugar, divided
  • 2 teaspoons almond extract
  • 1 teaspoon salt, divided
  • 2 cups unbleached all-purpose flour
  • 1/4 cup vanilla sugar


  1. Preheat the oven to 350°F.
  2. Using a stand-mixer with the paddle attachment, cream together the butter and 1/2 cup of sugar until fluffy.
  3. Add the almond extract and 1/2 teaspoon of salt and beat until well mixed.
  4. Add the flour slowly and mix until just incorporated, taking care not to over-mix.
  5. In a small bowl, combine the remaining 1/4 cup of sugar, the vanilla sugar, and the remaining 1/2 teaspoon of salt.
  6. Roll the dough into 1-inch balls then roll the balls in the sugar/salt mixture until evenly coated.
  7. Place the balls on baking sheets lined with parchment paper or Silpat, and then press lightly on them with the bottom of a measuring cup or drinking glass to flatten.
  8. Bake the cookies until just golden around the edges, 12-15 minutes.
  9. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes. Transfer the cookies to a wire rack to cool completely.
  10. Store the cookies in an air-tight container.
