Brown Sugar Oat Muffins with Strawberries

1 cup old-fashioned oats
1 cup whole wheat flour
1/2 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 eggs
3/4 cup packed brown sugar
3/4 cup milk (I reconstituted some dry milk)
1/4 cup vegetable oil
1 tsp vanilla extract 


In a small bowl, combine oats, flours, baking powder and salt. In another small bowl, beat the eggs, brown sugar, milk, oil, and vanilla. Stir into the dry ingredients until moistened.

Fill greased or paper-lined muffin cups two-thirds full. If desired, place one frozen strawberry in middle of muffin tin.Bake at 400°F for 15-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
