1 small seedless watermelon, sliced into 4 (2-inch-thick) slices
1 (5-ounce) package mâche lettuce
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup feta cheese crumbles
1/4 cup niçoise olives, pitted
• Using a 3-inch square cutter, cut squares from the centers of
the watermelon slices, being careful not to include rind. Using
a spoon, scoop out a small well in the center of the watermelon
squares, being sure not to cut through the bottom.
• In a small bowl, toss together the mâche, oil, salt, and pepper.
Place a mound of lettuce in each watermelon well. Evenly divide
the feta and olives among each serving.
• Garnish with microgreens, if desired. Serve immediately.
