Spicy White Cheddar Pimento Spread for Tea Sandwiches

Spicy white cheddar pimiento cheese sandwiches

 

24 open faced sandwiches

 

8 oz sharp white cheddar, shredded

8 oz Monterey jack cheese, shredded

5 T mayonnaise

½ tsp cayenne

½ cup diced marinated roasted red peppers

½ cup chopped toasted pecans

¼ cup minced chives

12 slices multigrain bread, cut into desired shapes

Garnish: Fresh Chives

 

1.       In work bowl of food processor fitted with blade attachment; pulse together the cheddar, Monterey Jack, mayo and cayenne until mixture is mostly smooth.

2.       Fold in diced red peppers, pecans, and chives until well combined.

3.       Spread a small amount in the center of each bread flower (or whatever shape you choose).

4.       Garnish with fresh chives
