2 cups grated sharp cheddar cheese
1 cup grated monterey jack cheese
1 cup grated pepper jack cheese
1 cup mayo
1/2 cup diced pimientos
1/4 tsp ground black pepper
1/2 cup finely chopped spicy pecans (see separate recipe)
8 slices wheat bread, crusts removed
Garnish: pimento cheese, pecan half, parsley
in medium bowl, combine cheeses, mayo, pimientos, pepper. Using an electric mixer at medium speed, beat until creamy.
Cover and chill.
Stir in spicy pecans.
Spread pimiento cheese evenly on 4 bread slices and top w/ remaining bread slices
Cut into fingers
Garnish with pimento cheese, pecan half and parsley if desired.
