2 (1lb) loaves focaccia bread
1 recipe Parmesan Butter (see below)
1/2 lb smoked turkey thinly sliced
2 cups baby spinach leaves, washed and dried
using 2 inch round cutter, cut 12 circles from each loaf of focaccia bread; slice each circle in half and spread inside with thin layer of Parmesan butter. Layer smoked turkey and spinach on bottom halves of focaccia circles. Top w/ remaining bread.
1/2 cup unsalted butter, soft
1/4 grated Parmesan cheese
2 T chopped fresh parsley
1 T lemon juice
1/4 tsp ground black pepper
In bowl, combine butter, Parmesan cheese. Add parsley, lemon juice, and pepper and stir to mix well.
