Poppy Seed Chicken Salad in Phyllo Cups

Makes about 30 phyllo cups
Adapted from TeaTime July/Aug 2007

To save time use store bought prepared chicken salad and add extra ingredients.

2 cups chopped cooked chicken
1/2 cup finely chopped apple
3 T mincec celery
2 green onions, minced
1/4 cup sour cream
1/4 cup mayo
1 tsp lemon juice
1 tsp honey
1 tsp poppy seed
1/4 tsp salt
1/4 tsp ground black pepper
2 (2/1 oz) packages frozen phyllo cups, thawed

garnish w/ chives

In medium bowl, combine chicken, apple, celery and green onion

In separate bowl, combine sour cream, mayo, lemon juice, honey, poppy seed, salt and pepper

combine and sour cream mixture with chicken mixture

spoon into phyllo cups

garnish with chives
