Pecan Waffles with Bananas Foster Topping

1 dozen 4 inch waffles

2 cups all purpose flour

¼ cup sugar

1 tsp baking powder

1tsp baking soda

½ tsp salt

½ cup finely chopped toasted pecans

3 large eggs

1 ¼ cups whole milk

½ cup sour cream

½ cup butter, melted

1.       Preheat waffle iron

2.       In medium bowl, combine flour, sugar, baking powder, baking soda and salt. Stir in pecans

3.       In separate bowl, whisk together eggs, milk, sour cream, and melted butter. Add egg mixture to flour mixture, whisking until smooth. Pour batter onto waffle iron, and cook until waffles are brown. Serve with Bananas Foster Topping

 

Bananas Foster Topping

Makes 4-6 servings

¼ cup butter

¼ cup firmly packed dark brown sugar

½ tsp ground cinnamon

2 T banana schnapps

2 T dark rum

¼ cup cane syrup

3 large ripe bananas, peeled and sliced

¼ cup pecan halves

1.       In medium skillet melt butter over low heat. Add brown sugar and cinnamon, cook for 3-4 minutes, stirring constantly, until sugar dissolves. Increase heat to medium; add banana schnapps and rum; cook for 3 minutes, stirring frequently. Add cane syrup; cook for 1 minute.  Add bananas and pecans; cook for 2 minutes, stirring gently to coat bananas. Serve Warm.
